Programme:Three calendar months, from 8:30 am to 2:30 pm, with compulsory attendance, aimed at professional learning of:

  • Knowledge of the raw material: choice and management.
  • Doughs: Realization, storage times and management methods.
  • Rolling out of the dough: technique and productivity
  • Simple, filled, colored pasta, gnocchi: Production, conservation, management and productivity.
  • Laboratory organization and management: applied management
  • Knowledge and application of hygiene rules
  • Treatment and conservation of the product.

Useful information
The course can only be accessed after having practiced the Beginners PASTA CLASS Sfoglia3 days , and with the approval of the teacher.
At the end of the course, the diploma of participation is issued with the evaluation of the teacher.
The course is certified by Alessandra Spisni, the class is made up of 3 professional students.
Material and equipment are provided by the School.
Comfortable shoes, short nails, a dedicated notepad are recommended.
The cost includes enrollment, school uniform (T-shirt, apron, hat) and 3 months of course.
At the time of registration, a payment of Euro 5600.00 is required.
The same will be withheld for early withdrawal of the student or in any case in the event that, due to lack of the same, the course is not carried out.
