“Originally from New York with an Italian father (Calabrese), I have been living in Bologna since 2014. What was to be a year in Italy has turned into almost 8 years! We now live here permanently. Part of the reason that we chose to live in Bologna is because I wanted to learn how to roll out a sfoglia. When I lived in NY, I used to watch La Prova del Cuoco with my aunt. Frequently, I saw maestra Spisni roll out dough so large and beautiful that it looked like a bed sheet. I had never seen anyone do that before in my life. I had to learn how. Even though I was already a culinary graduate in NYC, I was never going to learn this glorious tradition elsewhere. I graduated from the short and 1 month program at VSB in 2015.
