Description: A professional course certified by Alessandra Spisni.
Programme: Our most intensive programme in fresh pasta-making. It teaches pasta-making as a professional career and is therefore intended exclusively for those who want to work in a pasta workshop, restaurant or academy. The programme runs over 12 weeks and is also expected to include educational trips to visit producers of the main raw ingredients. The course is limited to just 6 students per academic year. Prospective applicants must express their interest and first attend the 3-day Sfoglia course (LINK).
After this initial course, the possibility of continuing onto the Professional programme will be assessed together with instructor Stefania Spisni.
Classes take place from 8:00 am to 2:00 pm, Monday to Friday. Attendance is compulsory.
The programme is tailored to the students’ learning pace, with 2 students per class and broad weekly objectives.
Topics covered during the course
- Understanding raw ingredients: selection and handling.
- Doughs: preparation, storage, timings and handling methods.
- Hand-rolling pasta sheets with a rolling pin: in-depth technique.

- 1. Dough-making, hand-rolling, fresh Maltagliati
- 2. Strichetti, Garganelli, Sorpresine, two-stage drying, dried Maltagliati
- 3. Flours, Strozzapreti, pasta nests
- 4. Tortelli, wholemeal Strozzapreti, pasta nests
- 5. Semolina gnocchi, Tortelli, Paglia e Fieno
- 6. Prezzemolata, Ravioli, ricotta gnocchi
- 7. Smeraldini, red pasta
- 8. Cannelloni, potato gnocchi
- 9. Rosette, Tortellini
- 10. Tortellacci, Tortellini
- 11. Caramelle, Cestini, seasonal pasta (nettle, mushroom)

- Production, storage, management and productivity.

Useful information:
- Admission to the course is only possible after completing the 3-day Sfoglia course and receiving the instructor’s approval. The lead instructor and tutor is Stefania Spisni.
- At the end of the course, participants receive a diploma of participation with the instructor’s assessment. The course is certified with the signatures of both Alessandra and Stefania Spisni.
- Materials and equipment are provided by the School.
- Comfortable shoes, short nails and a dedicated notebook are recommended.
- The price includes registration and the School’s official uniform (T-shirt, apron and hat).
- Payment of €6000.00 is required upon registration.
- This payment will be retained if the student withdraws early or if the course cannot take place due to the student’s absence.
