WHERE: Laredo, Texas
Ciao sfoglini,
I grew up in a small town on the Texas border called Laredo, where Johnny Carino’s was the extent of my Italian food knowledge for the first 18 years of my life. Birthdays, graduations, and special occasions were all celebrated there. Whether subconsciously or innately, Italian food became a focal point early on—forever tied to feelings of joy, conviviality, and the power of a shared meal.
When I came across this program, I knew immediately that I had to enroll. My pilgrimage toward learning the ancient art of rolling sfoglia has been one of the most rewarding experiences of my life. You will hear these three words often: time, patience, and repetition. Be patient with yourself, absorb the nuances, and trust the process. Most importantly, have fun—sfoglia is a true reflection of who you are in that moment.
Today, you’ll find me based in San Antonio, Texas, where I’m working toward opening my very own restaurant, carrying forward everything I learned at VSB. Please feel free to reach out with any questions—I’m always happy to connect.
A heartfelt thank you to Maestra Stef & Alessandra, and to Mary, Bert , Liz, and Andreo for your warmth, hospitality, and support. I wish you all the very best and hope to see you again soon.
