Hi, I’m Emilio,
Past: To appease the atavistic hunger that haunted him from birth and wanting to follow a strict regime of Bolognese cuisine only, he set his sights on following in the footsteps of his grandmothers to become SFOGLINA. Present: After graduating from SFOGLINA in June 2021, he practices every day to refine the technique and experiments with new raw materials in search of the ultimate flavour combinations.
Future: Two goals are clear in his mind:
-Making Tortelloni (his muse and white whale to the contemporary) best in the world.
– Being able one day to serve a plate of tagliatelle made up of a single, very long and perfect tagliatella.
Again he thanks Alessandra, Stefania and the vsb team for allowing him to become SFOGLINA, he has an imperishable moral debt to them.
