“Hi! My name is Emanuele, I’m Sfoglino and Illustrator.
My aptitude for drawing and creating emerged from childhood.
After an intense artistic training I decided to explore the world of cooking, rediscovering and becoming passionate about the traditional and artisanal aspect of food.
At first I attended two advanced training courses at ALMA, the International School of Italian Cuisine. During this journey I realized that I wanted to deepen my knowledge in the production of fresh handcrafted pasta. This is how I enrolled in the professional course of sfoglia and fresh pasta at the Vecchia Scuola Bolognese. From there a real adventure was born, which continues to this day. I am grateful for the experience and teachings of Alessandra and Alessandro; they allowed a real professional figure to be born in me as a Sfoglia pastry, which I continued to enrich in subsequent experiences. Among these, the most significant were the years at the Bolognese workshop l’Arte delle Sfoglia and the collaborations with the Casa Artusi Foundation (Forlimpopoli- FC) as a professional teacher of puff pastry and fresh pasta.
In parallel, Mastro Sfoglino was also born: a creative project where pasta and food meet illustration.
After ten years of experience as a puff pastry in Emilia Romagna, I wanted to take a new route, leaving for Paris.
Now I deal with the management and production of fresh pasta at the Italian épicerie Macaronis.
