Double drying
METHOD:
Double drying is a process used to preserve the sfoglia beyond the usual 3 days.
In order to proceed with complete dehydration it is necessary to proceed this way :
First work and roll out a thin sheet Dry your sfoglia on the cutting board or on the cloth until the edges lift and it feels rough and floury to the touch.
At this point, don’t cut the tagliatelle, but close your folded sfoglia with the internal edges in the shape of a square inside a food plastic.
Let it rest for a minimum of 15 maximum 45 minutes.
After this time, open your sfoglia and let it dry again on the cutting board or with a cotton cloth.
Once the second drying is finished and the sfolgia is almost completely dehydrated, cut your tagliatelle and make the nests in portions.
Finish drying by dehydrating the nests completely and store your tagliaelle long term.
Consume them within 3 weeks.
