Ingredients for a 3 egg dough
- 100 gr of pork
- 30 gr of butter
- 100 gr of real mortadella from Bologna SIMONA from Artigian Quality
- 100 gr of raw ham
- 100 gr of Parmigiano Reggiano aged for 30 months
- 1 egg
- Salt, nutmeg
- Colli Bolognesi white wine
- Half a ladle of broth
To make tortellini, you need to prepare the filling first.
Possibly the day before so that it is easier to work with.
Cook the pork in butter, cut into small pieces, season with salt, let the meat whiten and wet with the white wine.
Let the wine evaporate and finish the cooking process by adding the broth.
Chop all the ingredients together in a meat grinder, then mix.
Add Parmesan, egg, salt and nutmeg.
The same day you can make Tortellini, but it would be better to consume them in the next day.
