Ingredients and doses for 5 liters of broth
- 800 grams of Beef brisket
- 1 beef bone better if knee.
- ¼ of a hen (At Christmas, the hen is replaced with a capon)
- 1 celery stalk
- 1 carrot
- 1 white onion
- 50 grams of coarse salt.
Preparation
Fill a pot with cold water and dip the meat, bone and chicken.
Add the cleaned and washed spices: celery, carrot and onion.
Onion must be peeled but not sliced just like celery and carrot.
Salt with coarse salt, place the pan on a very low heat and let the broth simmer for at least 7 hours without skimming it.
Once cooked, the meat will be boiled and the broth will have a light golden / straw color.
Filter the broth with a strainer and use it to cook the tortellini.
The meat used to make the broth can be used to prepare meatballs, stuff ravioli or to make a filling of meat and potatoes.
