Ingredients and doses for 4 people:
- 260 g of flour
- 1 egg
- 15 gr of cognac or brandy
- 50 gr of orange juice
- 10 g of butter
- 8 g icing sugar
- a pinch of salt
- 500 gr of lard for frying
- vanilla sugar to be powdered
Make a pastry dough with all the ingredients, working it a lot
The dough must be very soft and elastic.
Roll out a sheet as thin as gauze.
Cut the strips 4 cm wide and 15 cm long with the sponge.
Cut the strips lengthwise by making three parallel cuts.
Fry the leftovers in the boiling lard by moving them with a fork.
When they are golden brown, drain and dry them on a sheet of yellow paper.
Arrange the sfrappole on a serving dish and sprinkle them with vanilla sugar.
