Ingredients for 15 portions
- 1 kg of minced beef front meat
- 125 gr celery stalks
- 125 gr carrots
- 250gr golden onions
- 150 grams of lard
- 500 grams of tomato sauce
- 2 tablespoons of coarse salt
- 1 glass of red wine
Preparation
Clean, wash and finely chop all the vegetables (celery-carrots and onions).
In a terracotta or aluminum pot, melt the lard until it reaches the smoke point to evaporate the water from the vegetables.
Combine the smells and let them cook over medium heat without losing sight of them.
Once the smells are gone, add the minced beef.
Put the salt on the meat, stir quickly until the meat changes color.
As soon as the meat begins to release its liquids, wet it with wine.
Let it evaporate until the meat no longer smells of alcohol.
At this point add the tomato sauce and let the final sauce boil for 6/7 hours.
